Number of Servings: 3 - 4
Ingredients
3 Medium cucumber, peeled and cut in small cubes
1 tsp Salt
1/2 cup Vinegar
1/2 cup water
3 Tbsp sugar (Crystal or powdered any)
1/4 tsp red pepper flakes
2 Tbs small red onions
1/2 Red Capsicum cut into small cubes
Some Cilantro Leaves (As per taste)
Method
Place cucumber in a bowl, sprinkle salt and toss well
Let this mixture sit for 1 hour in refrigerator, toss this mixture a few times in between
While cucumber is sitting in refrigerator lets prepare the mixture
Combine vinegar, water, sugar and red chilly flakes in a small saucepan; bring to a boil. Reduce heat, cook until reduced to a 1/3 cup (about 10 minutes)
Remove reduction from heat and add onion and red capsicum pieces
Let mixture cool to room temperature
After about 1 hour, drain extra water off cucumber and then combine with the vinegar mixture that we had prepared. Also add onions, red capsicum, cilantro leaves to the mixture and refrigerator until well chilled and then serve
